Creamy Tomato Basil Pasta

Ingredients:

- 12 oz pasta (penne or fusilli work well)

- 1 can (14 oz) crushed tomatoes

- 1 cup heavy cream

- 1/2 cup grated Parmesan cheese


- 3 cloves garlic, minced

- 1 medium onion, diced

- 2 tbsp olive oil

- 1 tsp dried oregano

- 1/2 tsp red pepper flakes (optional)

- Salt and pepper to taste

- Fresh basil leaves, torn (for garnish)


Instructions:

1. Cook the Pasta:

   - In a large pot, boil salted water and cook pasta according to package instructions. Drain and set aside.

2. Sauté Aromatics:

   - In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.

3. Make the Sauce:

   - Stir in crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Simmer for 5-7 minutes to meld flavors. 


4. Add Cream and Cheese:

   - Lower the heat and stir in the heavy cream and Parmesan cheese until melted and creamy. 

5. Combine Pasta and Sauce:

   - Add the cooked pasta to the skillet, tossing to coat evenly in the sauce. Cook for an additional 2-3 minutes to heat through.

6.  Serve:

   - Plate the pasta and garnish with fresh basil leaves and extra Parmesan if desired.

 Tips:

- For added protein, toss in grilled chicken or shrimp.

- Add spinach or other veggies for extra nutrition.


- This dish pairs well with garlic bread or a fresh salad.
