Ingredients:
- 2 cans young green jackfruit in water or brine, drained and rinsed.
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup barbecue sauce (choose vegan-friendly brand)
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Burger buns or sandwich rolls
- Coleslaw (optional, for topping)
Instructions:
1. Heat olive oil in a large skillet over medium heat. Add diced onions and garlic and sauté until onions are translucent, about 5 minutes.
2. While the onions are cooking, use your hands or a fork to shred the jackfruit pieces into smaller, pulled pork-like strands.
3. Add the shredded jackfruit to the skillet with the onions and garlic. Stir to combine.
4. Season the jackfruit mixture with smoked paprika, cumin, chili powder, salt, and pepper. Stir well to coat the jackfruit evenly with the spices.
5. Pour barbecue sauce over the jackfruit mixture and stir until everything is well coated.
6. Reduce heat to low and let the mixture simmer for about 15-20 minutes, stirring occasionally, until the jackfruit is tender and has absorbed some of the barbecue sauce.
7. While the jackfruit is simmering, toast the burger buns or sandwich rolls if desired.
8. Once the jackfruit is done, assemble your sandwiches by spooning the jackfruit mixture onto the bottom halves of the buns. Top with coleslaw if desired, then cover with the top halves of the buns.
9. Serve immediately and enjoy your delicious vegan pulled pork sandwiches!
