Go Go Mango Chicken
2 skinless, boneless chicken breasts
1 (12-oz) jar Trader Joe’s Pineapple Salsa
1 ½ cups frozen Mango Chunks
Peel a mango perfectly!
Preheat
oven to 350 degrees, place chicken breasts in a baking dish and cover
with both salsa mango chunks – no need to even bother with thawing!
Lightly drape with aluminum foil and bake for 30-40 minutes or until
chicken is done and juices run clear when cut. Be careful not to
overcook.
